The cultivation, use and cultural elaboration of cacao were early and extensive in Mesoamerica, to which the cacao tree is native. For example, a boat of this type found in an Olmec archaeological site on the coast of the Gulf of Veracruz (Mexico) dates the preparation of chocolate by the pre-Olmec peoples since 1750 BC [9] On the Pacific coast from Chiapas, Mexico, an archaeological site in Mokayanan provides evidence of cocoa beverages dating back to before 1900 BC. [10]

Around 1500 BC, the Olmecs of La Venta in Tabasco, Mexico, were the first humans to taste, in the form of a drink, ground cocoa beans, which they mixed with water and added various spices, herbs and chillies, and they were also the ones who began to cultivate cocoa in Mexico. [4] The earliest evidence of the domestication of the cacao plant dates back to the Olmec culture since the Preclassic period. [11] In the Olmecs they used it for religious rituals or as a medicinal drink, without recipes for personal use. There is still little evidence of how the drink was processed.

In 2008 the National Institute of Anthropology and History of Mexico published studies from the Universities of Columbia, Arizona, Yale, Wisconsin and Kennesaw, in which the analyzes applied to a vessel found in the excavations of Cerro Manatรญ, located within the ejido of Macayal , in the municipality of Hidalgotitlรกn, Veracruz, conclude that the consumption of cocoa may have been 800 years earlier than previously thought, in the formative period (1900-900 BC).
